I just love knights!  Note how the knight not only gives check, it also covers the potential escape square b6.  Meanwhile, White's other knight covers c6, forcing the black king onto the back rank.

1...Kb8 2.Nc6 mate.

Once again the knights work together; one gives check and also covers a7, while the other prevents the black king from escaping via c7.  The result - checkmate!
